Wife is wondering if you guys have any "fun" ideas for stuff she can make me do in just a speedo? (and it can be ideas that would only be "fun" from her point of view)

Hey, m8. Here are some ideas many women consider "foreplay" in general. Add the swim briefs and you up the ante.
Laundry / ironing
Dishes
Food prep (caution: hot oil popping and sputtering on your bare upper body hurts)
Taking out trash
Empty, clean and organize a kitchen cabinet
Deep clean a bathroom (careful not to get bleach on your swim trunks)

Also: Give your wife a massage -- include candles, relaxing spa music and aromatic oils

Problem is my wife's "girlfriends" are everywhere bar here, beer isn't my tipple of choice (tbh I haven't drunk anything in 2 years bar a couple of premixed drinks over xmas (and literally 2 over the whole of xmas)

Beer is a real mix though across the UK, everything from lagers, ales, stouts and a whole bunch of other things even some more out there stuff like tangerine porter etc

she doesn't mind them in my case, she's north american (deliberately keeping things vague) and in a conservative area (though mine wasn't much better, mother with a mindset stuck somewhere about 1930 something at the latest..) so wasn't something my wife was used to seeing, but she's gotten used to them over the years and now thinks they suit me and that swimshorts ain't a good look on me....I also have quite a collection, rule was you buy them, you wear them, so they are all I generally wear as underwear...

I'm going out on a limb here, and forgive me if I am overstepping, but how about swimming? From what I understand that may have been an original use for Speedo™ brand swimwear (and swimming briefs like them).

Yeah but why do what others expect? And there's only so much swmming can be done (and only so many months of the year when its warm enough to swim outdoors...swimming in a giant bath of bleach in amongst other folks filth (yes in the UK some people still treat the public pool as their monthly "bath" (being other wholly averse to soap and water - "I'm boosting my immune system), not helped by councils still referring to them "swimming baths"), urine and worse....no thanks)

How about just staying in for the day + night, if she's there too? Plenty of Saturdays where my wife and I are home all day doing stuff together and separate, in nothing but my speedo. At night, hang out on the couch and watch whatever she wants on TV with a glass of wine, speedo. You get the idea.
